Yesterday was my first day of the Whole30 challenge!! I still haven't gotten the book, It Starts With Food, that I really wanted to read before starting but oh well. I think I get the general concept of the challenge but I really need to read the details!!
Breakfast: 3 scrambled eggs with hot sauce and avocado
It was a quick breakfast before Tim's surgery today. Not what I planned but still delicious and filling. Which is good because I didn't get a chance to eat lunch until about 3pm. I had an apple in between meals but that's it. Ooh man I hate being hungry so it was annoying; I just need to plan better in the future. So when I finally did eat it was sooo delicious!
Lunch: Sweet potato with a delicious seasoning from Trader Joes, with chicken and apple sausage, also from Trader Joes. And to drink, seltzer water with raspberries and mint.
Dinner: Zucchini meatloaf topped with fresh tomatoes.

I also tried to make some crispy zucchini fries but they didn't really work out... I think it needed a little homemade garlic aioli or something so we will work on that later.
So overall, even though my daily meal plan didn't go quite according to plan, everything turned out good and I feel good! I'm excited to see how this works out in the long run.
Another thing I wanted to post were some before pictures... Don't be terrified, they are a little scary...
